When I say you don't realise how much you are taking in I mean just that. I have used Rosetta Stone for Spanish and after just a couple of sessions I could repeat things to my friends and family with confidence. I was not fluent by any means, this will take time and more effort but I could recall simple words and phrases without even really trying.
